nixos/soju: remove default db definition from generated config
In older versions of Soju, it was possible to override this value however
setting `db` in `extraConfig` now results in an error during start:
```
Dec 18 02:21:14 bnc soju[4107]: 2024/12/18 02:21:14 failed to load config file: line 10, directive "db": directive must not be specified more than once
```
The [soju documentation] states that opening an sqlite database in the
working directory is the default functionality if `db` isn't specified
