Revert "python3Packages.materialx: 1.38.10 -> 1.39.1"
This reverts commit e4d1e54749df0eaed81325315cb381578d9d07ed.
This is necessary, because 1.39 introduces breaking changes and
downstream software (e.g. openUSD) needs to adapt, first.
