bundlerEnv: fix documentation argument
This was ignored before. Now that it's passed through, it's possible
to do
(bundlerEnv {
name = "...";
gemdir = ./.;
document = [ "ri" ];
}).env
and get an environment where ri can be used to read gem documentation.
