performous: Pin to ffmpeg 7
This fixes the build.
Performous was patched with ffmpeg 8 support (https://github.com/performous/performous/pull/1087) however this patch has not been released and doesn't apply cleanly. It seemed best to revert to ffmpeg 7 for now until a fully supported version is released.
