pythonPackages.xrootd: improve xrootd overriding (#289072)
Make it easier to override its pkgs.xrootd dependency.
- Pass pkgs.xrootd as `xrootd` instead of `pkgs`.
- Call with `inherit (pkgs) xrootd;`
