bitcoind: 29.0 -> 29.1
Since #425555, updating the hash of checksums and signatures is
required, so doing this here too.
Also took the suggestion from https://github.com/NixOS/nixpkgs/pull/425555#issuecomment-3258325000
to make outdated checksum data more obvious and easier to debug.
