Revert "signal-desktop: determine SOURCE_DATE_EPOCH via git"
This reverts commit 82993db6f4352b636be27da202a6a54fdadb0552.
I forgot that `postCheckout` is not available on stable. Doing a
workaround with `leaveDotGit` would complicate backporting and this
package is backported frequently.
