xdg-utils: Ensure `xdg-mime` can find `shared-mime-info`
Issue discovered when testing #251474, `xdg-mime` can't find the mimeinfo DB:
❯ nix-shell --pure -I nixpkgs=. -p xdg-utils
$ xdg-mime query filetype /dev/stdin < some/picture.png
