macvim: fix build after Darwin SDK update
MacVim needs to use the system Xcode to build. Having `DEVELOPER_DIR`
set in the environment causes Xcode to try to use the nixpkgs SDK, which
doesn’t work. Unsetting it allows MacVim to build.
