immich: comment reasoning for jellyfin-ffmpeg
Using the jellyfin-ffmpeg variant has a reason (TL;DR: used by upstream), which is now mentioned & linked to in the nix file itself, see https://github.com/NixOS/nixpkgs/issues/351943.
