luaPackages.luarocks: add versionCheckHook
luarocks being wrapped by luarocks_bootstrap, there can be a confusion
between the 2. Rather than fixing this (since we might use lux anyway),
for now let's make sure both are upgraded at the same time and check
that with `versionCheckHook`.
