* git-stack: add zlib to build input to fix darwin build
The version 0.10.18 of the package, introduced in 25.05, broke the build
for `darwin` systems, due to a missing dependency on `zlib.h`.
Inspired by https://github.com/NixOS/nixpkgs/pull/366745
