nixos/dokuwiki: Overhaul for structured settings
Added the RFC42-style added the posibility to use
`services.dokuwiki.sites.<name>.settings' instead of passing a plain
string to `<name>.extraConfig`. ยด<name>.pluginsConfig` now also accepts
structured configuration.
