perf data: Add open flag

Avoid double opens and ensure only open files are closed. This
addresses some issues with python integration where the data file
wants to be opened before being given to a session.

perf data: Clean up use_stdio and structures

use_stdio was associated with struct perf_data and not perf_data_file
meaning there was implicit use of fd rather than fptr that may not be
safe. For example, in perf_data_file__write. Reorganize perf_data_file
to better abstract use_stdio, add kernel-doc and more consistently use
perf_data__ accessors so that use_stdio is better respected.

perf util: Remove unused perf_data__update_dir

perf_data__update_dir() was added in 2019's
commit e8be135751f2 ("perf data: Add perf_data__update_dir() function")
but has never been used.

Remove it.

perf tools: Automatically use guest kcore_dir if present

When registering a guest machine using machine_pid from the id index,
check perf.data for a matching kcore_dir subdirectory and set the
kallsyms file name accordingly. If set, use it to find the machine's
kernel symbols and object code (from kcore).

perf tools: Add missing headers needed by util/data.h

'struct perf_data' in util/data.h uses the "u64" data type, which is
defined in "linux/types.h".

If we only include util/data.h, the following compilation error occurs:

  util/data.h:38:3: error: unknown type name ‘u64’
     u64    version;
     ^~~

Solution: include "linux/types.h." to add the needed type definitions.

perf inject: Add facility to do in place update

When there is a need to modify only timestamps, it is much simpler and
quicker to do it to the existing file rather than re-write all the
contents.

In preparation for that, add the ability to modify the input file in place.
In practice that just means making the file descriptor and mmaps writable.
